In his grandmothers footsteps, James Fransaw, is carrying on the legacy of his grandmother who owned and operated a local bakery in Independence Heights for many years. Beatrice Porter was a seasoned and skilled baker. After leaving her job at Moellers Bakery in Bellaire, Texas, her husband built her a shop in the back of their house and the neighborhood has been eating and smelling fresh baked goods since. James, her grandson has found his calling in carrying on his grandmothers legacy. He spent many days over the last few years working alongside her in the kitchen. He learned her recipes, techniques and every secret to making her baked goods. Now, today James is stepping into his future by reopening the bake shop and serving up some of the same homemade sweets his grandmother once made. Pecan pie, lemon pound cake, sweet potato pie and German chocolate cake are all desserts you can find at the bakery.

B and J Cake Shoppe is a household name in Independence Heights. Most locals know that the sweet shop takes no special orders and the menu changes from day to day. Locals also know that it is first come first served and if you don’t get it when it comes out of the oven you might just miss out. Most locals would agree that it depends on your own taste buds when it comes to determining what’s the best dessert. Some people brag about the chocolate chip cookies while others are in love with fresh baked peach cobbler. No matter what the flavor, James is ready to serve his homemade desserts with the same homemade goodness as his grandmother. He hopes to build his own legacy and brand by expanding the menu options.
